ZiPhone developed by iPhone Hacking genius Zibri has been a very popular application to jailbreak and unlock iPhone.
iLiberty is another application that has been built to jailbreak, activate and unlock your iPhone, so all those facing an issue with ZiPhone could give iLiberty a shot.
Update: I just tried Jailbreaking my iPod Touch with iLiberty+ and it
worked like a charm.
Before I go into the details it is important to mention that before you jailbreak your iPhone, be sure to backup in iTunes so that you can restore your iPhone if something goes terribly wrong and since I have not tried this method on the iPhone so I am not in a position to confirm either way so do remember that hacking your iPhone is completely at your own risk.
iLiberty+ is the combination of iLiberty and iPlus to jailbreak, activate and unlock the iPhone for those who have Windows while iLibertyX is the application to jailbreak, activate and unlock the iPhone for Mac users.
iLiberty works with iPhone firmware 1.0.2 and up.
iLiberty is the application which jailbreaks, activates and unlocks the iPhone, while iPlus allows you to add custom payloads i.e. option to install BBInfo (lets you see which bootloader, IMEI, SIM # etc your iPhone is using), DropBear SSH (lets you access your iPhone’s filesystem remotely) and option to upgrade the Bootloader from 3.9 to 4.6.
In case of iLibertyX, the payload options are available in the payload tab, while in the Standard tab you have options to jailbreak, activate and unlock the iPhone.

When you launch the iLiberty or iLibertyX application, you will see an application window which gives you the options to jailbreak, activate and unlock as can be seen in the screenshots above. All you need to do is connect your iPhone to iTunes before opening the app and select the options and then click the aptly named "Free my iPhone!" button and the application will do the needful.
For all those who are new to the iPhone hacking world, here is some information which will help understand the options available on the iLiberty application window when you launch it:
Jailbreak prepares your iPhone for modding, and installs the cool Installer app for you as well thus making it easy to install the unofficial native iPhone applications.
Activate as the name suggests activates your iPhone by bypassing the iTunes activation process, useful if you are unlocking your iPhone. If you have AT&T you don’t need to do this since you can activate through iTunes.
Unlock lets you use the iPhone with any GSM carriers other than AT&T.
Erica Sudan, the iPhone hacking legend over at Tuaw gave iLiberty a try (only the jailbreaking part) on her refurbished iPhone and this is what she had to say:
"After a few false starts, it got going and worked brilliantly. I was able to track progress with the on-screen updates and not only did it activate my iPhone but allowed it to work with a disposable Cingular SIM I had on-hand. All in all, a great success."

You should be able to use iLiberty to jailbreak your iPod Touch as well.

Update 1: I just tried Jailbreaking my iPod Touch with iLiberty+ and it
worked like a charm and it installed the Installer app as well. However I had firmware 1.1.3 (4A93) running on it.
After the jailbreaking process
iTunes gave me some error saying cannot connect to the device but unplugging and
plugging the iPod Touch resolved the issue. YouTube is working fine as well.
Next, I am planning to restore the jailbroken iPod Touch with firmware 1.1.4 to see if I have the same success. So stay tuned!
Update 2:
I just updated my iPod Touch with firmware 1.1.4 (4A102) and then ran the iLiberty+ again, this time too it worked like a charm and installed the Installer app and YouTube is working fine too.
Also noticed with the latest version of iLiberty+, the payloads are available in the Advanced Tab.
